Cheesy Buffalo Chicken Pull Apart Bread

Pull apart bread is one of those appetizers that creates a moment at a party. You set it on the table and people immediately gather around it before it even fully cools and then it is gone in about four minutes flat. This cheesy buffalo chicken pull apart bread is the version that has people standing at the counter waiting for it to come out of the oven and I mean that literally. Warm crusty sourdough stuffed into every pocket with a spicy buffalo chicken and cream cheese filling, topped with melty cheddar, and baked until golden and bubbling. It is bold, it is cheesy, and it is completely impossible to eat just one piece.

The bread cutting technique is the step that makes this look so impressive and is actually really satisfying to do. You make vertical slices across the loaf stopping just before you cut all the way through, then turn the loaf ninety degrees and slice again creating a grid of pockets all across the top. Every single pocket gets stuffed generously with the buffalo chicken mixture so you are getting filling in every piece you pull. Do not be shy here. Fill them all the way up, pack them in, and add the extra cheddar on top of all the openings before it goes in the oven.

The buffalo chicken filling is five ingredients mixed together in one bowl. Shredded rotisserie chicken, hot sauce, cream cheese, cheddar, and green onions combined into this creamy spicy mixture that stuffs into the bread and melts into something completely irresistible as it bakes. This is also part of the one rotisserie chicken three recipes situation — the same chicken that goes into the mini quesadillas and the high protein buffalo chicken dip works here too, which makes this whole game day spread a very efficient grocery run.

Wrap it in foil for the first fifteen minutes so the inside gets hot and melty all the way through, then unwrap for the last five to seven minutes so the top gets golden and the cheese bubbles and crisps slightly around the edges. Serve it immediately with ranch or blue cheese on the side and watch the whole thing get demolished before you have even had a chance to plate anything else. This is the game day recipe that earns a permanent spot on the hosting rotation.
